    I haven't had an appetite for days now. Surviving on protein shakes and bits of chicken breast, veggies, etc. But tonight I had a little bit of an appetite... I had some rare deli roast beef I needed to eat up, so I figured I would try an open faced hot roast beef sandwich...I heated up a jar of low fat mushroom beef gravy (I added garlic, pepper and some essence to it), and once heated added a bunch of roast beef until just heated through. I toasted 1/2 of a wheat n'fiber hamburger bun, put it on a plate, topped it with several slices of the roast beef and gravy, topped it with low fat provolone and popped it in the micro real quick to melt the cheese. OMG! It took all of 10 minutes, I served it with some steamed brocolli and it was DELISH!! Next time I'm going to add some sauteed onions and peppers...

    The best part is that the entire thing was 170 calories, 8g net carb (the bun had 2.5g fiber) and 7g of fat. It tasted like something that should be loaded with fat and calories. And it was VERY filling!!! And the best part is, I have leftovers so I can have it again tomorrow night

    It's nights like this I realize that I can DEFINITELY eat like this for the rest of my life
