    You guys have no idea how stoked I am. I'm pretty tired of meat and veg....meat and veg....meat and veg...Now I can have some variety and .....dare I say it.....BREAD even if it's OOPSIE bread. I CAN'T FREEKIN WAIT to try those darn things.
    Wearing these white jeans today...12/28/09..but man are they TIGHT!!

    I haven't tried these, but they look pretty good. They are made with zucchini, eggs and cheese.



    I want them with spinach dip. I need to find a good low-carb recipe for spinach dip. Anyone have one?

    Here they are used as nacho chips.

    I am so behind in the times that I totally missed this post, but there's some AWESOME looking stuff on here!!! I'm going to have to try that lasagna, Roxanne.

    Another site that has not only great recipes, but great advice is low carb friends. I see someone above mentioned Linda Sue's site - she is also a member of low carb friends, I see her there all the time.
    Low carb seems to be the only way I can lose or mantain my weight. If I start eating carbs regularly I start gaining weight again Frustrating, but at least I know about it now. I went many years trying lowfat and wondering why I couldn't lose weight. By the way - I do eat carbs in moderation, but only the healthy complex ones.
    I think its unrealistic to try never to eat any carbs for life.

    Decadent Mini Chocolate-Dipped Layer Cakes

    3 eggs, separated
    3 ounces cream cheese
    1 tsp baking powder
    1/8 tsp cream of tartar
    1 packet Splenda
    2 Tbsp Davincis Vanilla Syrup (Sugar Free)
    1 cup Whipped cream (whipped with two packets of Spenda)

    Preheat oven to 300 degrees F.

    In a bowl, whip egg whites with cream of tartar until peaks are stiff (about 5 minutes).

    In separate bowl, blend cream cheese, yolks, baking powder and davincis sugar free syrup. Adding half of the yolk batter at a time to the whites and using a tall spoon (I use an iced tea spoon), make a lazy sine wave through the batter once. Turn the bowl 90 degrees and repeat. Add second half of the yolk mix and repeat sine wave two more times.

    Place in ungreased, nonstick miniature cake pans (6" pans, I found mine at Super Target).

    Bake for 30 minutes. Remove pans from oven and let cool on a cooling rack. Makes 6 small cakes.


    Chocolate Glaze

    2 Lindt 80% dark chocolate squares (buy in candy bar)
    1 Tbsp davincis vanilla sugar free syrup
    2 small packets Splenda
    2 Tbsp heavy whipping cream
    2 Tbsp butter
    In a microwavable bowl, combine ingredients. Microwave for 30 seconds. Stir well. Dip tops of crullers into mixture. Drizzle any remaining mixture to fill bare spots. Let crullers rest on cooling rack until glaze has set.

    Will coat 6-8 cakes, and can be used for other purposes.
    This does dry to a shiny glaze.

    Store in refrigerator, covered.


    To assemble the dessert:

    Dip tops of cooled cakes into chocolate glaze. Let rest on rack until chocolate hardens. On bottom cake layer, place whipped cream or pudding. Top with second chocolate-dipped cake layer. Top with fresh or frozen fruit (I use frozen, mixed berries) and drizzle juice for presentation.

    Keep unused portions refrigerated.

    Carbohydrates: 5
    Fiber: 2
    Net Carbohydrates: 3
    Protein: 3
    Fat: 36


    Nutritional information for dessert without glaze/with glaze (glaze will easily coat 6-8 layers):
    Serving size is listed as 2 layers.

    Calories: 436/546
    Carbohydrates: 4/2
    Fiber: 0/2
    Net Carbohydrates: 4/6
    Protein: 15 grams/ 16 grams
    Fat: 36 grams/48 grams

    Default Buffalo Chicken Wings

    Sometimes I don't feel like cooking. Last night was one of those nights. I always keep frozen hot wings in the freezer for just such an occasion, so I can dump out a few and pop them in the microwave. There are several different companies that make the frozen buffalo chicken wings, so you may have to try a few to see which one you like the best. I used to get Tyson and their wings are so-so.

    Of course, the wings are better when you prepare them yourself. Nothing beats homemade, right? You can prepare a bunch and then freeze some that you can microwave at a later time.

    There is a local pizza place that makes hot wings. When my husband orders pizza, I order the hot wings and dip them in ranch dressing, I have a salad, and maybe a few toppings from his pizza.

    measure and add to your own likings

    ground turkey (you can use turkey sausage or any meat you like I use turkey because it's better for you.

    onion, bell peppers, garlic powder, pepper and a little seasoning salt cook meat until it is done then drain

    then add gumbo soup pack from the frozen veggies section or you can add the veggies from the frozen soup mix it has (corn, okra,tomatoes or the other bag has corn, tomatoes, okra, peas and carrots) which ever one you like just add your veggies

    now add mild or spicy rotel and tomato paste mix all together and let it simmer down until done.

    Atkins is so strict and not really a lifestyle change i can live with forever.... I like south beach.... it has the same principles but lets you move more. They just came out with a new cookbook - it has it all, yum!!!!

    whoa, that stuff does look awesome...but also like a heart attack waiting to happen. i'm glad i'm not on any restrictive diet. i mean, my calories are restricted, but not any food groups. thank god!
