    Talking I need Fast and easy recipe's?

    I didn't realized there was a forum for recipe's so I am re-posting the topic i was trying to start in the other forum.... Basically I need fast and easy meal ideas
    Breakfast, Lunch, Dinner.. whatever. What are some of your favorite quick and easy recipe's now that you are eating healthy wholesome foods and losing weight? I just want to get some ideas on how i can throw together quick meals for my family or just for myself... especially since i have to go back to work next week.

    One of my little tricks is if i cook chicken breast for dinner, I can use whatever is leftover on a salad the next day. Also if i need to brown some ground turkey for something I will do several pounds at once and freeze the extra cooked meat in freezer bags so that when i need "one pound browned ground beef" for any recipe i can grab a bag of browned ground turkey and it is ready to go just needs to be thawed and heated up.

    So let me know some of your quick tips for fast easy meals. Thanks!

    My favorite breakfast (152 calories) is so easy...
    warm a corn tortilla (55 cal actually less than the whole wheat but the whole wheat has more fiber)
    put one ounce slice of lo-fat cheese (70 cal) microwave it to melt the cheese- 10 seconds...
    cut up a hard boiled egg with NO yolk (17 calories)
    top with 2 tablespoons of fresh salsa (or storebought) 10 calories
    Easy and yummy... I boil my eggs at the beginning of the week and it literally takes me 2 minutes to make my breakfast.... kids love it too... keeps me full all morning

    Salsa Chicken (dinner) serves 4-6

    Brown 4 chicken breasts
    Add large jar of salsa (cook till chicken is done)
    Add can of black beans
    top with cheese
    serve over brown/basmati rice

    So easy and soooo yummy!

    This isnt exactly the greatest but it is better than most, super filling, and super easy....

    Quesadillas ---
    1 Package of pre-grilled chicken, normal 3 dollar size (low fat or low sodium is best if you can find it)
    Mexican Cheese Blend (Reduced Fat or Fat Free)
    4 - High Fiber Tortillas (We have a specific brand we buy thats name escapes me at the moment)
    Sauce

    For the Sauce -
    1/4 Cup Fat Free Mayo
    3/4 Teaspoon of Sugar
    1/2 Teaspoon of Cumin and Paprika
    1/8 Teaspoon of Cayenne Pepper and Garlic Powder
    Dash of Salt


    The sauce can be made in advance and stored (covered) in the fridge, it only contains spices and Mayo so it will last for a couple of weeks.

    Take 1 tortilla, spread a light layer of sauce over one side, add 1/4th a package of the chicken to one side and lightly cover with the Mexican Cheese blend. Fold it over, Make a second so you have to halfs. At this point you can either use a Quesadilla maker or a pan. Warm a pan up to about half heat and use a healthy non-stick spray. Cook until 1 side of tortilla is toasted and flip over and toast the other side.


    Eating 2 halfs is incredibly filling and really not that bad as far as calorie/fat/protein etc is concerned...


    To make it even healthier get some organic chicken and grill the chicken yourself!

    For a lot of my dinners I just have some sort of meat and it can be made over easy
    the next day... for example one night I have steak and the next day I just chop the left overs
    up with scissors and cook it with onions and cumin and cloves and garlic and throw
    it over some greens for a fajita salad
