Many probably do something similar to this. This is one of my staples. It's very easy, low in fat and carbs.
I use the thin chicken breasts and cook them on medium high heat in a little olive oil. Just a few minutes a side, sprinkled with pepper, emerils, garlic powder, and italian seasoning. Reduce the heat and add a few tablespoons of low carb spaghetti sauce to each piece, top each with 2 tblsp of shredded parmesan cheese, cover and cook on low until finished... depending on the thickness of the chicken. I generally just serve with a veggie, sometimes with Dreamfields or whole wheat pasta, or a half double fiber bun. I have also added peppers, onions and shrooms when time permits, but it's just as good without. Generally dinner is done within 20 minutes, it's very filling
