    Default Easy Chicken Parmesan-Low carb/Lowfat

    Many probably do something similar to this. This is one of my staples. It's very easy, low in fat and carbs.

    I use the thin chicken breasts and cook them on medium high heat in a little olive oil. Just a few minutes a side, sprinkled with pepper, emerils, garlic powder, and italian seasoning. Reduce the heat and add a few tablespoons of low carb spaghetti sauce to each piece, top each with 2 tblsp of shredded parmesan cheese, cover and cook on low until finished... depending on the thickness of the chicken. I generally just serve with a veggie, sometimes with Dreamfields or whole wheat pasta, or a half double fiber bun. I have also added peppers, onions and shrooms when time permits, but it's just as good without. Generally dinner is done within 20 minutes, it's very filling

    Sounds really good. I have never heard of double fiber bun?? What is that, and where can I find it. Is is something you special order or does your local grocer carry it?

    Yummy! THANK YOU! I have a good WW recipe for eggplant parmesan I will have to post. I am all about some rich Italian food!!

    They are actually Nature's Own... they make Double Fiber hot dog buns, hamburger buns and bread. They are all really good, low cal, heavy fiber, making them pretty low carb. The good thing about the buns is you can have a whole bun for 10g net carbs, but I generally just have a 1/2 if I am going to have some bread, giving me 5g net carbs, and still satisfying that bread craving. The bread comes out to I believe 8g net carb per slice, which still isn't bad, but I use the buns for a lot of things. When I cook up some lean hamburgers, I can actually splurge and have a bun with it, and not feel guilty! Same goes with the Hebrew National 98% free beef franks... those with the bun and you would never know you are eating somewhat healthy!!

    You have probably seen them before... this is what the packaging looks like for the bread, the others are similar.
