Ok girls, I got this from the betty crocker website, so I can't tak all of the credit, but I have added some spices. It is yummy, filling, and best of all low fat and low carb!

Mexican Chicken
1lb of chicken brests
1 can of black beans drained and rinsed
1 can of mexicorn (green giant I think)
1 can of rotel tomatoes and green chilis with celantro
1 palm full of ground cummin
1 palm full of oregano
1/2 a palm full of garlic powder.
1 package of fajita seasoning mix
1/2 cup of water
dump all in a crock pot on high for 3 hours, or low for 8. it will seem kind of soupy, , so dip out w/ slotted spoon. I put this on salads w/ranch dressing or in a low carb tortilla w/ sour cream. It is wonderful, and fulfills that crave for mexican food. Enjoy!
