I made a box of Blueberry Muffin mix the other day and instead of 2 eggs, I added 3 egg whites, instead of 2 tablespoons of oil, I added 1/4 cup of apple sauce. They were very moist and yummy and low in fat and carbs. Give it a try.

I have been substituting egg whites for whole eggs and apple sauce for oil and butter in receipes for over a year now. I was very skeptical when I first heard this was a low fat option for muffins, brownies, cakes, cookies, etc. Boy was I surprised! You can't tell a difference in taste and everything is kind of lighter or fluffier. Thanks for posting this great bit of info. I'm really into revamping receipes to make them more healthy without sacrificing taste.
