1 16 oz. can black beans, rinsed and drained
1 8 oz. can pineapple bits, drained (reserve juice)
1/4 cup pineapple juice
1/2 cup finely chopped red bell pepper
1/2 cup thinly sliced green onions
2 tsp vinegar
1/2 tsp ground cumin
1/4 tsp salt
pepper to taste

Combine and mix well. chill. Mix before serving. Good on bed of lettuce or in whole-wheat pita.
