GLAZED CORROTS

1 pound baby carrots
1 tbsp butter
2 tbsp brown sugar
1/2 cup apple juice
2 tbsp fresh ginger
1/4 tsp cumin
1 tsp white pepper
a pinch salt

In boiling water,cook carrots for 10 minutes or till tender.Let carrots cool.Melt butter and sugar in a pot stirring often.Reduce heat and cook 5 minutes to caramelize,remove from heat.Add juice and bring to boil,reduce heat.Liquid will be a light syrup.Add carrots,ginger,and cumin to liquid.Stir.Cook mixture on med heat untill glazed.Add salt and pepper.
