Default chicken pasta- light on calories, big on flavor!!

I have FABULOUS pasta recipe that is only 225 calories per serving, and is very filling!

1 box whole grain bowtie pasta (or you can use the vegetable pasta)
1 lb. boneless skinless chicken breast, cut into about 1 inch chunks
    3T italian seasoning
    1 c. shredded mozzarella cheese
1 can salt free diced tomatoes
1 bottle fat free italian dressing

cut chicken into 1 inch chunks, marinade in 1 c of italian dressing (it absorbs much flavor if you marinade for about 8 hours). remove chicken chunks from marinade, and mix in 1/2 the italian seasoning. heat 2 T vegetable oil in a large frying pan, add chicken and cook until chicken is cooked through and browned. Remove from heat and put on paper towels to soap up extra oil.

boil pasta to al dente as directed, drain water off and pour 3/4 c of the mozzarella over the hot pasta, as well as 1/2 the italian seasoning. mix together to melt cheese, keep covered on low.

drain your diced tomatoes, then add to the pasta, along with the chicken, remainder of the italian dressing, and the remainder of the cheese.

this is great as a pasta salad served cold, or you can bake it in the oven, on 350 for 30 minutes, and rather than mixing the remainder of the cheese into the finished product, sprinkle on top of your pasta in a baking dish and melt.

    so yummy!!!
    xoxo Casi
