The rain has kicked in over here in the northwest. So..yesterday I decided to make some healthy muffins for an easy breakfast addition for busy mornings.
I made Oat Applesauce Muffins and they turned out pretty good - not too sweet but they are yummy! Thought I'd share.
1 cup rolled quick oats
1 cup light buttermilk (I used a cup of fat free vanilla yogurt instead)
1 cup whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar (I used sugar free honey substitute, 1/3 cup)
1/2 cup unsweetened applesauce
1 egg
Add cinnamon, nutmeg, other spices to your liking.
I also chopped up a fresh peach to make it moist & more flavorful.
Mix oats & buttermilk, let stand while you mix up other dry ingredients. Then mix everything together. Spray muffin tins with Pam really well. Scoop batter into tins, fill almost to top and bake in oven 400 degrees for about 16 mins, but check after 12mins. MAKES 12 MUFFINS.

Next time I'm going to mash up a banana and try it in the batter..mmm maybe some berries.
With the peach added, and the yogurt & SF honey in place of what is listed, the nutrition info was 105 CALS/1 FAT/2 FIBER
