Question OT - Need dinner suggestion for leftover mesquite-grilled chicken
I'm thinking a tossed salad with chicken strips, peppers, and mandarin orange segments and maybe some citrus splash vinaigrette ....

HOWEVER ...

I could use some extra suggestions as to what to make with this leftover chicken - I'm bored with the rest of the ideas I'm working with.

It's kinda hard since I don't know if you have the ingredients but we like to use leftover chicken (depending on the flavor of the chicken) in a stir fry with a little bit of I can't believe its not butter, onion, yellow squash and zucchini, of course salt and pepper and a little garlic. My husband likes to make it spicy but I like it rather plain.

BUT, we grow zucchini and squash in our backyard because it's one of our favorites and we have a plethora.









OMG, I just bought a size 8 jeans!!

we also like to use chicken in a broccoli cauliflower cheese casserole. Basically those 4 ingredients with either cream of mushroom or cream of chicken soup, we use velveeta but I have used sliced american in a pinch and it was good too. If you use velveeta cube it, slices layer it.

We used to use rice for this casserole but now we use cauliflower.

MMMM ... quesadilla .... MMMMM ...

Since it's already mesquite chicken, adding a fajita-ish seasoning wouldn't mix badly with that, and I have high-fiber/lowfat tortillas at home ... and I can go easy on the shredded cheese .

I'm all about the mexican, I'd turn it into fajitas, put into strips and sautee some onions, garlic, red, green peppers and some jalapenos... add the chicken to it, do up some black beans and some non fat sour cream, sprinkle w/ a little low fat cheese and eat in a whole wheat tortilla. I do it all the time.
47 down 30.5 to go!

You guys are making me super hungry with all this food talk!!! I like the fajita idea. I also make a killer taco salad with left over chicken. I mix dry french onion soup mix with non fat sour cream and put that on the bottom of a dish. Then I layer it up with lettuce, tomatoes, the chicken, green onions, 2% cheddar cheese and salsa on the top. I eat it as is the hub like to eat it with tortilla chips or Doritos.
