I do occasionally indulge in fried foods. What I do is take a bag of pork rinds (don't be afraid if you don't like pork rinds - I don't like them either by themselves but the food turns out good), crush the pork rinds into something that looks a little like flour. Add parmesan cheese and seasonings. I dip my meat in eggs, then coat it with the pork rind mixture and fry.
My husband is not low-carbing and flat refuses to do so, but he LOVES it when I make fried chicken this way. It turns out so crunchy and delicious! Next time I make it, I'll have to take pics.

I've also made fried pork chops, chicken fried steak, fried fish, and even mozzarella cheese sticks (I dipped them in organic no sugar added marinara sauce).
