Question Low-Carb Yummy Meal Ideas
Ok - I've come to realize that I need to stop eating bread and sweets. I'm going to cut these out starting tomorrow. For those of you that are eating low-carb, can you PLEASE help a sistah out and give me some ideas? Here are the ideas I have so far:

Tuna salad in a green pepper
Leafy green salad w/ walnuts, blue cheese, and low-carb/low-sugar dressing
Steak
Easy Parm Chicken (chicken rolled in parm cheese, garlic powder, and Italian seasoning mix and baked)


I don't like fish.... so that's out. If I remember correctly from South Beach Diet, no carrots allowed.

Help!!! I'm going to need more of a variety than this!!!

Default Cauliflower Lasagna
I made this recipe and it was a HUGE hit with my husband and 16 year old nephew (and me!). I did not make the one pictured below. We ate mine too fast for me to get a picture. LOL

Default Rolls


The recipe for the rolls is on the same site as the link in my previous post. In the picture, she used the rolls as a bun for Wendy's Baconator. The rolls are VERY LOW CARB and are suitable for Atkins Induction even.

This recipe has helped me more than anything else to stick with low carb this time. They have so many uses! I've used these rolls for hamburger buns, tuna salad sandwiches, philly cheesesteak sandwiches, hotdog buns, mini-pizzas, and a bacon egg and cheese sandwich with low carb syrup. For people who eat out a lot, they can take these with them and swap out the buns for burgers and sandwiches.

Once I messed up on the rolls and they came out very flat. I used them for enchiladas. Delicious!

Kristin, get yourself the Atkins paper back book it has alot of really good recipies in it. One of my favorite ones was to take a head of cauliflower and boil the tar out of it till it is really soft drain it and using a hand mixer whip it like mashed potatoes with a whole cube of butter some salt and pepper. put it in a 9x9 pan and cover with grated cheese and bake at 350 for a half hour or so till the chees is bubbly and melted and enjoy! I love to eat it for breakfast too! Good luck

Default Fried Foods
I do occasionally indulge in fried foods. What I do is take a bag of pork rinds (don't be afraid if you don't like pork rinds - I don't like them either by themselves but the food turns out good), crush the pork rinds into something that looks a little like flour. Add parmesan cheese and seasonings. I dip my meat in eggs, then coat it with the pork rind mixture and fry.

My husband is not low-carbing and flat refuses to do so, but he LOVES it when I make fried chicken this way. It turns out so crunchy and delicious! Next time I make it, I'll have to take pics. I've also made fried pork chops, chicken fried steak, fried fish, and even mozzarella cheese sticks (I dipped them in organic no sugar added marinara sauce).

Default Veggies
My favorites are:
  • Just plain ol' lettuce - for salads, meat roll-ups, on burgers and sandwiches
  • Spinach - raw or cooked
  • Greens
  • Broccoli - steamed, stir-fry, or with melted cheese
  • Cabbage - cooked with a little olive oil, onions, bell pepper, and seasonings
  • Green beans
  • Cauliflower - this is something that I never used to eat but I have found that it is SO VERSATILE! It's good with broccoli and cheese, stir fry, etc. I've mixed it with sour cream to make cauliflower "mashed potatoes" to go with some of my fried meats (my husband even liked it), and recently I've started "ricing" the cauliflower (grating it) for use in recipes - like lasagna. You can prepare the riced cauliflower with soy sauce to make "fried rice", or prepare like "Spanish rice", etc. Doxiegal, that recipe that you mentioned sounds good and I'm going to try it!

For right now, I'm staying away from higher-carb veggies such as carrots, corn and peas.

whoa, that stuff does look awesome...but also like
