I need them desperately.

I know Roast is always easy but I think we are burnt out on that.

I make Red Beans in the Crock Pot too, but my kids really don't like them. I hate hearing the Beyotching when we have that.

I found a recipe that is very good and simular to roast except you use boneless chicken thighs, 2 can's of Fat Free Cream of chicken soup, cut and peel your potatoes, add some carrots and half an onion. Cook on slow or low for 8 hours. OMG it is sooooooooooo good. I throw the thighs in there frozen. It is that easy!!!!

oh, now you are in my area of expertise! I make everything in my crockpot!!! I have a cookbook called 101 recipes for the slow cooker (which my friends have right now), but here are some things that I make:

stuffed cabbage, stuffed peppers, chili, spaghetti w/ meatballs, BBQ country ribs, horseradish pot roast, beef tip & noodles, sweedish meatballs, creamy beef stoganoff, shredded beef sandwiches, macaroni & cheese, steak & rice casserole, garlic chicken & mushroom stew, swiss steak, beef stew, veggie soup, potato soup, broccoli soup, bean soup, split pea soup, (pretty much any soups). Let me know if you'd like any of the recipes!





May 2007- 174 lbs: The journey began!
Jan 2008- 132 lbs: My goal was met!
July 2008- 138 lbs: Gained due to meds
Nov 2008- 143 lbs: Set new goal and ready to lose!

My favorite is either skinless chicken with your favorite salsa!!! Just put chicken in crock pot or slow cooker then pour enough salsa over chicken to cover turn on low and cook 8 - 10 hours. I serve with baked potato, rice, or mashed potato, we use the salsa as a topping for one of the three.

Or use eye of round beef steaks put in crock pot cover with a large can of rotel and small if you want more. Cook all day 8- 10 hours on low to med. We serve this with the same as above.

These two recipes are so easy and healthy!! Hope you enjoy!

That steak and rotel one sounds good, Kara says rotel is to spicey for her. She ruins all my fun, wahhhhhhhhhhh.

Nursie, you should get the "Fix it and Forget it" Cookbook. They also have one now called "Fix it and Forget it Light" for low-fat recipes. Everything in there is stuff you can make in the crockpot, and lots are real easy, just a few ingrediants. I got mine at Wal-mart for 9.96 I think, but you could probably pick one up on ebay for a buck or two.

I also do the skinless chicken with salsa. Only I also add canned corn and black beans. Then when it's done I put it on a tortilla. You can add sour cream and cheese if you'd like, it was a weight watcher recipe. I absolutely love and so does my hubby!

Nursie....they have the milder version of the rotel!!! My daughter doesnt like it either so I just rinse hers with hot water. Gross, but she loves the meat with just ketchup!!! Ilove rotel!@

My fav. in the crock pot is~
4 boneless skinless chicken breast~
2 cans of cream of mushroom
one jar of ragu cheese sauce~
just dump it in there and let it cook all day~
then serve it over wide egg noodles~
OH MY LORD!
ALSO~ you might try the new crockpot dinners in a bag~ the beef stew is AWESOME!

I cook porkchops or roast in the crockpot with several cans of Italian Stewed Tomatoes (enough to cover the meat at least) then on top I put several baby red potatoes and maybe some fresh green beans and then sprinkle with a little italian seasonings-on low all day-the meat eventually will fall off the porkchops! So good-you don't have to put the vegetables-I just do that so we have a "complete" meal. Its good with roast too-in fact my husband prefers his roast cooked that way instead the traditional gravy and roast..I guess it could be simular to the Rotel idea...just not spicy hot...

OK HERES A REALLY REALLY GOOD MEAL!!!!

GET 1 REALLY NICE BIG PIECE OF FLANK STEAK
3 OR 4 CANS OF PIECES AND STEMS MUCHROOM
3 CANS OF BEF GRAVY(I USE FRANCO AMERICAN CAN GRAVY)
WHITE RICE

IN AN FRYING PAN PUT ALITTLE BUTTER COOK FLANK STEAK ON EACH FOR ABOUT 3 MINUTES. PUT FLAM ON HIGHER LEVEL SO YOU CAN GET THAT CRISPY ON EACH SIDE! AFTER YOU HAVE DONE BOTH SIDES TAKE OUT OF PAN AND PUT IT ON CUTTING BOARD. CUT THE MEAT WITH THE GRAIN IN 1/2 INCHE STRIPS.
PUT THE GRAVY IN THE CROCKPOT ALONG WITH THE MUSHROOMS (DRAINED).THROW IN THE MEAT AND LET IT GO. IT HAS TO COOK ATLEAST 8 OR 9 HOURS. WHEN THE MEAT FALLS APART AND IS STRINGY THAT IS WHEN IT IS READY.
RIGHT BEOFRE FOOD IS READY COOK YOUR RICE! I PUT THE MEAT,GRAVY,MUSHROOMS OVER THE RICE BUT YOU CAN PUT IT ON THE SIDE!!!!!! IT IS THE BOMB AND SUCH A GREAT HARDY MEAL AND IT REALLY TAKE ABOUT 10 MINUTES TO DO!!!! ENJOY GIRLS!!!!!

I USUALY GET A BIG FLANK STEAK SO WE CAN GET 2 DINNERS OUT OF IT!
