The fruit lassi is one of India's favourite drinks - made with yogurt and fresh fruit. In summer, ice is added. A lassi is an Indian version of milkshake....
Ingredients: 1 1/2 cups (8 oz/250g) fresh or frozen strawberries 1/2 packet silen tofu (4 oz/125g) 1 1/2 cups (375ml) plain yogurt 15 ice cubes 3 tablespoons honey 2 tablespoons unsalted pistachio nuts 4 extra strawberries and 4 sprigs mint leaves to garnish (optional) Makes 4 glasses 1. Put the shelled pistachio nuts in a small plastic bag and break the nuts into small pieces using a rolling pin. Set aside. 2. Wash the strawberries and remove their leaves and crowns. Set 4 strawberries aside and slice the rest. Divide the washed mint into 4 small sprigs. 3. Place the sliced strawberries, tofu, yogurt, ice cubes and honey in a blender. Blend until smooth, about 5 minutes. 4. Pour the mixture into glasses and sprinkle each one with crushed pistachios. Decorate each glass with 1 slit strawberry an a mint sprig. Serve with a straw. Cheers!!

oops typo error!! Ingredients number 2 should be "silken" tofu... And instead of strawberries you could also use 2 ripe bananas or 10 oz (300 g) of ripe papaya. Guess just any fruit could be added.

My husband is addicted to Lassi's... everytime we go to an Indian restaurant, or anytime we travel to a country where Lassi's are common, that is all he drinks... he likes the plain Lassi with salt&pepper though.......
