View Full Version : Spinach Bread, low carb, low cal/ Grilled Cheese!!

I'm a mad scientist in the kitchen...here's some of my latest low carb concoctions.

Can make this is a glass baking dish or tripling the recipe and baking it in a loaf pan.

SPINACH BREAD

Butter for greasing baking dish
1 (10 oz) package frozen chopped spinach, thawed and drained
4 large eggs, beaten
1/4 tsp crushed garlic
salt and pepper to taste

Preheat oven to 400 degrees. Butter an 8x8 baking dish

Mix together spinach, eggs and garlic. Season with salt and pepper. Pour into prepared pan. Bake for 15 minutes or until mixture has set. Allow to cool slightly . Cut into squares. Use a spatula to remove squares from pan. Refrigerate or freeze until ready to use.
FOR LOAF
Triple the ingredients and pour into a well buttered loaf pan. Place pan on a baking sheet and bake for 1 hour and 15 minutes at 350 degrees. A whole loaf will yield 12 slices. use what you need;wrap well and freeze extra slices or loaves

A bit firmer type is as followes:
2 10 oz packages frozen chopped spinach, thawed and drained
8 large eggs, beaten
1/4 tsp crushed garlic
salt and pepper to taste
.1/2 tsp baking powder
1 cup Flax seed meal
1/2 cup parmesan cheese

Follow the same cooking directions.

Yield 14 slices: 89 Calories, 3.5 Carbs, 4.6 fat, 7.6 Protein-per servings

You can serve it thinner if you want, but make sure you have chilled it in the frig first. The entire loaf has 1250 Calories, 45 Carbs and 65 Fat and you can divide the amount of slices.

It actually does replace bread (accept for toast for jam....:eek: )You can even toast it as long as it's pre-chilled AND sliced thin. You can make a grilled cheese from this, sandwiches, etc.

It really does fill you up, too!

ok.. now I wonder... if you cut those into little squares and dry them in the oven on a low temp could you make cracker sorta things...

well I dry biscotti at 250 I think.... 20 minutes each side.. but those are thicker... maybe start with 10 minutes each side ??

Okay, I can't find my bread knife, never use it anymore. But I cut them as thin as I could. Of course the stuff is warm as I just baked it. So they are sorta thin.
I put the oven at 250, let's see what happens.

Okay, Oolala,

It took about 40 minutes in the over at 250. They weren't cut really thin though.

They make an okay cracker. They're a bit rough on the roof of the mouth and they are a bit eggy tasting this way. However, if you wanted to make croutons out of them, they wouldn't be bad at all.

Ahh... well it doesn't sound like a total loss.... maybe some more spices would have cut the egg flavor.... or thinner crackers.... i was thinking they might come out tough .... like spinach "jerky" haha

Hey girl today was my first day on Adipex...I'm so excited and ready to lose weight...I just have no idea on what good low fat foods there are..can you give me some examples of what you ate for breakfast and lunch? I'm gonna try your grilled cheese for lunch today :)
