I just wanted to share the recipe for a cake I made for my daughters birthday. I used natural ingredients in lieu of refined sugar...
I did make a few changes from the original I didn't use any stevia... instead of the date sugar I used raw organic honey and apple juice.... that was plenty when mixed with the pineapple juice and pineapple... also instead of the whole wheat flour I used coconut flour which is almost 100% fiber.. also instead of walnuts I used macadamias
With the frosting I used the same honey - no milk and a fresh lime from my tree... The icing was SOOO good
This is NOT low carb but a better alternative and lower on the glycemic index than a store bought birthday cake... plus it's loaded with fruits and vegetables which have nutritional value
