Ok so here is a flourless muffin recipe. They are yummy, fast and good for Atkin's folks.
You will need:
a mini muffin pan
Pam cooking spray
6 eggs (or more depending on how many muffin's you want to make)
Nuts (your choice)
Raisins (if you want)
Bananna (if you want)
Artifical sweetener or honey
Cinnamon (if you want)
Preheat your oven to 350
Scramble eggs add a little bit of WATER and mix
add nuts and desired ingredents make sure mixture is 50/50 eggs to mixture
Spray mini pan with PAM
Pour mix into mini muffin pans and cook for 15 min or until toothpick comes clean
They are very yummy with I can't Believe it's not butter SPRAY on them
Trust me you will swear they have flour when you eat them!! Hope you all like them! :p
