View Full Version : Any REALLY good bean recipes?

Since I was a small kid I haven't liked beans. I avoid them like crazy. But, in committing to a healthier life style I would like to try them again. Tried some kidney beans in chili a few days ago - blahhh!!! I just couldn't choke them down. So, I figure you all here could help me out. There are many different types of beans. Which are strong flavored, which are mild. What do I try? How do I cook them? Any assistance would be most appreciated. I also have 2 small kids and would like to be introducing them to bean dishes as well.

Rebecca,

You might like Texas Caviar. To make it, you combine in equal measure:

fresh green beans
canned kidney beans
canned yellow hominy
and canned Black Eyed Peas

then, add an appropriate amount of onions and red, yellow and green peppers.

then to make the dressing:
3/4 cup olive oil, or other oil of your choosing
1/4 cup vinegar
1/2 cup sugar
1 clove of garlic
and 1 tsp of salt.

mix everything together and marinade in the fridge overnight. If things are too sugary or oily for your liking, you can tweak the dressing after its ready.
