I'm not a big fish eater, but I LOVE salmon and I like tuna. My favorite way to have salmon is from a japanese steakhouse. OMG good. But I cannot cook the stuff to save my life. I HATE it when I cook it. I think your best bet is to try different kinds for yourself just to see. And if you are going to do it at home, by fresh, not frozen. It's a lot better.
