I'm a daily one... I do it to stay motivated... I truly only count the once a week weigh in though. I use all the in between days to know whether or not I need to get my act together before the "real deal".
On your second question: I found it VERY hard to eat at first, but YOU HAVE TO!

Try eating some light things, if nothing else, like yogurt, fruit, cheese. (I don't avoid carbs, just keep it all in moderation!)
